Summary
Sodexo Leisure has an exciting opening for an Executive Chef 3 for a multiple outlet venue. The ideal Executive Chef will have prior experience successfully managing a cultural destination with at least $8M volume in annual F&B sales. The EC3 will need to be willing to embrace a team-based culture that values partnership, collaboration and innovation. The ideal candidate will have experience managing multiple retail food outlets & very high end, high volume special events. The EC3 has financial responsibility for the culinary department, staffing & client relations. Responsibilities
* Designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel in the largest accounts or in an account requiring a highly skilled Executive Chef. * This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. * Selects and develops recipes and other items for clients. * Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manages/controls food cost issues and offer solutions, may train other chefs outside account. * May cook selected items, and plan or price menus. * Typically has chefs and cooks reporting to this position.
Ideal Candidate
* Should have approx. 10 plus years of experience in an Executive chef. Serve Safe certified is a plus. * Candidate must have exceptional customer service skills ( verbal and written), professional, personable and good communication skills. * Experience delivering quality food during catering events and managing multiples catering events * Must be organized, hands on, food production exp, knowledgeable with food and labor cost * Must have experience with inventory, ordering, safety, staffing, schedule & payroll, HACCP * Experience training & developing hourly/management staff, supervising and coaching * Experience creating menus with fresh ideas; utilizing fresh products and unique trends * Experience working with other chef’s to assure food quality, menu, recipe, techniques, menu developing, food & labor cost. * Customer service oriented, professional and good communication skills * Culinary degree is preferred **Basic Education Requirement** * Technical, Trade, or Vocational School Degree **Basic Management Experience** * 3 years **Basic Functional Experience** * 4 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
